Hi hoping it is good as yet to bake it! Thanks for sharing such a healthy Rye flour recipe. The second rise is when the loaf is shaped so you can't really transfer it to a tin afterwards. Loved it should have done it long ago.

I know you need a gluten component to make the dough rise by trapping the CO2 while the bread proves but there are other sources of gluten ryr my baker was very quick to point out. It transforms me into someone pragmatic, capable and resilient. Spelt bread turns me into the baker I wanted to be when I first started cooking. I love sourdough.

Posted on Jan, by virtuousbread in Bread and conversation. I confess, I am not a fan of caraway seeds. I think maybe I over loaded on them when I was a child, or maybe I never liked them. Recently, however, I have used them in cooking rather than baking as they are called for in my recipe for cabbage rolls which I LOVE and I have come to appreciate that a teeny tiny amount of caraway seeds taste rather delicious. This is a traditional mixed grain bread recipe off the boat from any of the Northern countries where rye rules and caraway is a frequent and honoured guest.
Ryf good. The dough was so easy to handle throughout that I worried it might be too dry! ItThe bread is the perfect texture for it! Mixing the rye flour with white or wholemeal flour helps to give it more elasticity and therefore a lighter texture, but if you want a more traditional rye bread you can adjust the quantities.
Leave the dough to rest for 20 minutes. If using caraway seeds work these in to the dough. I made this bread in my bread maker and it worked perfectly. This week, I am sticking to just a teaspoonful of honey and adding pumpkin seeds!
